Cách làm chả cá gói giấy bạc với từng miếng chả cá thơm ngon, quyện với nấm mèo giòn sừng sực, rất hấp dẫn. Món chả này dùng với nước mắm chua ngọt và bánh mì hoặc cơm đều ngon.
Chả cá mua sẵn tại các siêu thị (chả cá ba sa hay cá thu ảo đều ngon nhé). Nấm mèo ngâm nước cho nở ra rồi rửa sạch, thái nhỏ. Củ hành tím giã thật nhuyễn. Thịt ba rọi đem xay nhuyễn rồi trộn với chút gia vị và hành tím, để cho ngấm khoảng 10 phút.
Tiếp đó, trộn chả cá và thịt heo, nấm mèo lại với nhau rồi đem quết khoảng 10 phút nữa cho chả dẻo là được. Giấy bạc cắt từng miếng nhỏ hình vuông, rồi dùng muỗng múc chả cá cho vào giấy bạc rồi gói lại. Làm lần lượt cho đến hết nguyên liệu.
Xếp chả đã gói vào nồi hấp cách thuỷ khoảng 40 phút là chả chín.
Để chả gói nguội bớt rồi lột giấy bạc ra, dùng nóng với nước mắm chua ngọt và bánh mì hoặc với cơm. Từng miếng chả cá thơm ngon, quyện với nấm mèo giòn sừng sực, rất hấp dẫn.
